Best thing to stuff a jalepeno with?

I've stuffed them with 2 things so far, and they both turned out great! first i used the basic cream cheese wrapped in maple bacon. they were good. next time i used boudin, that i missed with a little bit of tomato sauce, and stuffed that inside a jalepeno wrapped in maple bacon, it was probably the best appetizer i've ever made, any suggestions on other stuff to put inside it?
